The story behind St Duke´s Distillery.
At St Duke’s Distillery, our journey began in the idyllic southwest dairy region of Harvey, where Harvey Cheese had already earned a reputation as a world-class artisanal cheesemaker. However, as the dairy industry faced decline and operational costs rose, we sought new ways to sustain our business. The challenges of the COVID-19 pandemic further pushed us to innovate, as tourism slowed and we looked for alternative sources of income.

Located in the heart of Western Australia’s beautiful South West, we are a small, family-owned distillery with a passion for crafting exceptional spirits.We specialise in small-batch artisanal distilling, transforming wheya natural by-product from our very own Harvey Cheese, —into a unique range of award-winning spirits. As the only distillery in Australia using cow’s whey to produce alcohol, our drinks offer a one-of-a-kind experience.

How could we better utilise the whey, a by-product of our cheese-making process?

The answer was St Duke’s Distillery. We emabarked on a mission mission to craft a unique, locally inspired product that not only showcased the richness of our region but also gave new life to our whey. Unlike many distilleries, we don’t buy ethanol—we produce our own alcohol on-site by fermenting and double-distilling the whey left over from cheesemaking, bringing out distinctive flavors and character. 

As the only distillery in Australia to produce alcohol from cow’s whey, we take pride in offering a truly one-of-a-kind spirit.

Diversifying into distillation has not only allowed us to navigate economic challenges but has also positioned us as a key employer in the region, supporting local producers and strengthening our community. Today, St Duke’s Distillery stands as a testament to innovation, sustainability, and the rich heritage of Harvey—where tradition meets craft, and waste transforms into something extraordinary
