The answer was St Duke’s Distillery. We emabarked on a mission mission to craft a unique, locally inspired product that not only showcased the richness of our region but also gave new life to our whey. Unlike many distilleries, we don’t buy ethanol—we produce our own alcohol on-site by fermenting and double-distilling the whey left over from cheesemaking, bringing out distinctive flavors and character.
As the only distillery in Australia to produce alcohol from cow’s whey, we take pride in offering a truly one-of-a-kind spirit.
Diversifying into distillation has not only allowed us to navigate economic challenges but has also positioned us as a key employer in the region, supporting local producers and strengthening our community.
