The Solution and The Process

The journey starts right after the cheese curds are separated. High quality cow's whey is not thrown away and is sent straight to the distillery instead. With the use of a natural fermentation process, we turn waste lactose sugars into alcohol. The conversion of lactose sugars into alcohol is a vital step in our zero waste initiative.

Closed Loop System: With Harvey Cheese, we have the ideal closed loop system. For our dairy partner, we are able to minimize their environmental impact and distillery waste by taking on the eco-friendly and sustainable 'next step'. Their waste product becomes our valued product.
